Today I Wish to talk about Kombucha. That is obviously entirely unrelated to those Banana Oatmeal Cookies, but I know you won't mind.

1/2 cup unsalted butterat room temperature

1 large egg

1 1/2 teaspoons pure vanilla extract

1 cup all-purpose flour

1 tsp baking soda

1 teaspoon salt

2 tsp ground cinnamon


Preheat oven to 350°F.

From the bowl of a stand mixer fitted with the paddle attachment, or in a big bowl with an electric mixer, beat the sugar and butter until light and fluffy, about 3 minutes.

Scrape down the sides of the bowl and blend in the egg until fully incorporated. Scrape down the sides of the bowl and add in the mashed bananas and vanilla.

Gently add the bread mixture to the banana mixture and mix until just combined.

Scrape down the sides of the bowl and stir to recombine.

Use a medium cookie scoop (approximately 1.5 tablespoons) to scoop the dough onto prepared cookie sheets leaving about 2 inches between each cookie.

Bake in preheated oven for about 9-11 minutes.

Remove cookies from the oven and lightly press on the shirts of each cookie using the base of a drinking glass. Considering these cookies do not spread considerably, this will help give them a traditional cookie shape.
